Cool Off with Chilled Watermelon Soup

With temperatures soaring over 100 degrees this summer, cool off with a Chilled Watermelon Soup recipe straight from the Pine Needles kitchen. 

Chilled Watermelon Soup

1 large Watermelon

1 cup Sugar

2 tbs Salt

1/2 tsp Cayenne Pepper

1 & 1/2 C Cream or Half and Half

 Hull out the large watermelon and run it through a food processor until it is smooth.  Pour the watermelon juice through a strainer into a pot in order to remove the seeds or pulp.  Bring watermelon juice to a boil and add Sugar, Salt, Pepper, and Cream.  Heat until sugar is dissolved.

 Cool soup at least 4 hrs before serving. Garnish with fresh pieces of watermelon.
